2015 Cabernet Sauvignon

Intense crimson red with a purple rim. Aromas of black fruit, spicy oak, licorice and plum. Rich on the palate with a fine tannins and balanced acidity.

Winemaking Notes:  De-stemmed but minimally crushed, the grapes underwent a short cold-soak before undergoing a traditional red wine fermentation. After an extended maceration with skins and seeds, each lot was drained and pressed. Racked from coarse solids into barrel, the wine spent approximately 16 months in French oak barrels without racking or stirring and underwent a full malo-lactic fermentation. Select barrels were chosen for this wine through a series of blind tastings, then taken off their lees and allowed to integrate prior to being bottled unfined and unfiltered. Less than 100 cases produced.


Cellar Potential: Drinking best between 2018 and 2025.
