Food Pairings
This is a very versatile wine to pair with, it would work well with seafood dishes such as Halibut, Scallops and Salmon. Also pairs nicely with a variety of lighter summery dishes such as grilled vegetables, chicken skewers, ceviche and salad with a citrus vinaigrette or a whipped feta dish.
Winemaking Notes
Sourced from our oldest Pinot Gris block (planted 1988), picked late in the season and fermented in older puncheons, without ML conversion. Aged for 8 months on lees with monthly stirring. Bottled late summer 2025 and aged in bottle for nine months before release. The distinct pile of stones in our Tufford Road Vineyard marks a mature block of Pinot Gris vines planted over thirty years ago. Each year the pile gets a little bigger, as the stones make their way to the surface through the well-drained sandy loam soil and are collected by hand. The low-yielding vines in this block are meticulously tended, resulting in a wine full of character with exceptional concentration and mouthfeel.
