This wine is spectacular with a wide variety of food—especially anything that is salty, spicy or high in acid. It pairs perfectly with roasted chicken, turkey and pork, as well as
dishes that are usually hard to pair with such as fresh Thai spring rolls or spicy curries. It also goes well with goat cheese and strong blue cheese, as well as a variety of summer salads and side dishes.
The fruit from these 17 rows of grapes was kept separate from the other blocks of fruit that was brought in throughout harvest. Maturity in the grapes was defined by the flavours tasted, with the goal of maintaining the exceptional acidity that Riesling exhibits in Niagara. Gently pressed and cold settled for several days. Clarified juice was fermented at cold temperatures, and fermentation was halted when the ideal sugar/acid/alcohol balance was reached to complement the flavour profile. Kept cool on its lees then cold stabilized, filtered and bottled in early 2023.
