Food Pairings
This is a very versatile pairing wine that would work well with seafood dishes such as Halibut, Scallops and Salmon. Also pairs nicely with a variety of lighter summery dishes such as grilled vegetables, chicken skewers and salad with a citrus vinaigrette.
Winemaking Notes
This wine is sourced from two separate vineyard plots within the same vineyard in the Lincoln lakeshore sub-appellation. Each plot was carefully harvested and grapes were soaked prior to pressing to help extract flavours that had developed during the growing season. The youngest vines were harvested first and fermented in exclusively stainless steel, yielding a bright and aromatic fresh Pinot Gris. The older vines were harvested a few days later, and were partially fermented in older French oak barrels, resulting in a more rich and expressive Pinot Gris. Following fermentation, the wines were combined and ages on their lees for three months prior to bottling.
