Food Pairings
This is a very versatile pairing wine that would work well with seafood dishes such as Halibut, Scallops and Salmon. Also pairs nicely with a variety of lighter summery dishes such as grilled vegetables, chicken skewers and salad with a citrus vinaigrette.
Winemaking Notes
The distinct pile of stones in our Tufford Road Vineyard marks a mature block of Pinot Gris vines planted over thirty years ago. Each year the pile gets a little bigger, as the stones make their way to the surface through the well-drained sandy loam soil and are collected by hand. The low-yielding vines in this block are meticulously tended, resulting in a wine full of character with exceptional concentration and mouthfeel. The fruit was harvested 10 days after the much younger planting of Pinot Gris at our Tufford road vineyard. After a short period of time on the skins, a gentle press cycle resulted in juice with a slight pink hue. The Pinot Gris was then transferred into neutral oak barrels, where it was fermented and aged on its lees prior to bottling.
