Light straw in color with brilliant clarity. Pure aromas of green apple, lemon zest, mandarin orange, and mango. Bracing acidity on the palate with balanced sweetness, vibrant flavours, and a lengthy finish.
Sourced from seventeen rows of Riesling vines planted in our vineyard on the Beamsville Bench. Maturity in the grapes was defined by the flavours that we tasted, while trying to maintain the exceptional acidity that Riesling exhibits in Niagara. Hand-picked, sorted, whole cluster pressed, and cold settled for several days. Clarified juice was fermented at cold temperatures for two months, halted when the ideal sugar/acid/alcohol balance was reached to compliment the flavour profile. Kept cool on its lees until March 2010, then cold stabilized, filtered and bottled.
