SPRING PEA & ASPARAGUS SALAD

Instructions

  • 8 stalks asparagus
  • 1/2 cucumber
  • 1lb sugar snap peas
  • 1 bunch mint
  • 2 cups arugula sprouts or baby arugula
  • 1/2 cup feta cheese
  • 2 scallions
  • 1 Cup Sourdough or focaccia croutons

Mint Buttermilk Vinaigrette:

  • 1 clove garlic
  • 1 lemon or 1/2 cup lemon juice
  • 1/4 cup buttermilk
  • 1/3 cup olive oil
  • 1 bunch mint
  • Salt to taste

DIRECTIONS

Step 1. Blend all the vinaigrette ingredients in a blender and set aside

Step 2. Roast asparagus at 350* for 10 minutes and cut each into 3 pieces

Step 3. Slice the cucumber in half (lengthwise) and then slice again into 1cm wedges

Step 4. Rough chop the mint

Step 5. Thinly slice scallions (1/2cm) on a diagonal

Step 6. Mix all remaining ingredients together (hold back feta) and toss the salad with vinaigrette.

Step 7. Top with crumbled feta and enjoy!
