Greek Salsa

For those looking to try something a little different from a traditional fresh salsa, this Greek salsa is packed with fresh flavours and punch. The texture has delicious crunch and if you shut your eyes you can almost taste the seaside.

Perfect Pairing:Pinot Grigio

Ingredients

• 1 English cucumber (peeled if preferred) and diced
• 1 cup grape tomatoes,  halved or quartered depending on their size
• 1/3 cup pitted kalamata olives diced
• 2 tablespoons chopped fresh parsley
• ½ teaspoon of dried oregano or 1table spoon of freshly chopped
• 2 tablespoons of red wine vinegar
• Salt and pepper
• ½ cup crumbled feta cheese

Instructions

In a bowl, gently combine all of the ingredients and stir.   Add in feta cheese and stir gently again.    Best served right away.

This is a simple salsa that can be served with pita chips, fresh toasted pita or tortilla chips.    It would also make a delicious topping over grilled chicken breast or fish!
