Recipe by Christine Flynn from A Generous Meal
Note from Heidi:
When I was growing up, my mom would make a salad with every meal, even when we ordered in pizza for the night. I now do the same with my family and we love an easy, delicious salad that packs a lot of fresh favours. We started growing our veggies and herbs and that makes the salads even more delicious.
Wine pairing: Chardonnay Unoaked & Original hard cider or Cherry Rose hard Cider
Tip: Allowing raw onions to sit in cold water for even a few minutes will help remove some of the sting.
Place the onions in a small bowl of ice water and let stand for about 5 minutes.
In a large salad bowl, place the lettuce, cucumber, tomatoes & herbs. Season with salt & pepper to taste. Gently toss to combine
In a small bowl, whisk together the tartar sauce and vinegar. Remove the onions from the ice water and add them to the salad along with the dressing. Gently toss the salad again, until the lettuce is evenly coated with dressing. Season with more pepper to taste. Garnish with edible flowers (if using). Serve immediately.
